Brown Butter Potatoes and Asparagus

Brown Butter Potatoes and Asparagus
4-5 med. red potatoes
10 fresh or frozen asparagus spears, cut into 1" pieces
5 T. butter
2 cloves garlic, minced
salt and pepper to taste
Wash and cut the potatoes into 1" chunks, place in a pot and cover with water. Bring to a boil and cook till fork tender. Add the asparagus to the pot for a couple minutes just before potatoes are done. Meanwhile, In a small pot over med. heat, melt the butter and whisk until it begins to be golden brown. Add in the minced garlic and cook for a few seconds, remove from heat. Drain the potatoes and asparagus. Put into a serving dish, season with salt and pepper then pour the browned butter over the potatoes. Gently toss to coat.
