Eclair Cake (Reduced Calorie Version)---
Ingredients:
8 serving(s) fat free sugar free instant vanilla pudding and pie filling mix
66 small reduced-fat graham crackers
3 cup(s) low-fat milk
8 oz Cool Whip Whipped Topping Free cool whip
11 serving(s) Pillsbury Creamy Supreme Sugar Free Chocolate Fudge Frosting
2 tsp vanilla extract
Directions:
Mix pudding, milk and vanilla until smooth. Fold in Cool Whip. Layer 9x13 pan with half of the graham crackers. Pour half of the pudding mixture over the crackers and spread evenly. Add another layer of graham crackers over pudding then pour remaining pudding over crackers. Melt frosting in tub in microwave (about 1 minute). Pour 3/4 over cake and spread evenly. Chill for at least 4 hours, but 24 hours would be better.
