Garlic Basil Rice

Brown rice is a great staple in a healthier lifestyle and this garlic basil version is a perfect staple recipe. It is full of flavor without a lot of added fat and calories...plus it comes together super quick making it perfect for a quick weeknight dinner
Skinny Garlic Basil Rice
Serves 6
Prep Time - 5 min 
Cook Time - 30 min 
Total Time - 40 min
Ingredients
2 tsp extra virgin olive oil
1 cup onion, chopped
4 garlic cloves, minced
1 1/2 cups dry brown rice
2 cups chicken stock
1/2 cup fresh basil, chopped
1 tsp salt
1 tsp pepper
Instructions
In a medium saucepan heat olive oil over medium heat
Add in onion and cook until softened, about 4-5 minutes
Stir in garlic and cook for an additional 2 minutes
Stir in rice and cook for an additional 2 minutes, stirring to coat rice and let it toast up a bit
Add in in chicken stock, basil, salt & pepper, stirring to combine
Bring to a boil
Cover and reduce to a simmer, cooking until all liquid is absorbed and rice is tender
Fluff with a fork
Top with additional basil if desired
Serve & Enjoy!!
