Broccoli
and Potato Bake (approx. 4 servings)
4 medium size potatoes...
6 oz. frozen chopped broccoli, cooked
4 T. butter, melted
1/2 C. sour cream
good pinch of salt and pepper
1 C. shredded sharp cheddar cheese
2 green onions, sliced up
2 T. real bacon bits
Wash the potatoes and place on a microwave safe plate. Using a fork poke some holes in them and microwave for 5 minutes, turn them over and microwave another 5 minutes. The potatoes should be tender like a baked potato. Remove and allow to cool enough to handle and then remove the skin from the potatoes and place them in a mixing bowl. Using a potato masher mash up the potatoes then add the butter, sour cream, salt and pepper stir well to combine. Spread the potatoes in the bottom of a 2 quart casserole dish. Top the potatoes with 3/4 C. of the cheese and sprinkle the bacon bits and green onions over the cheese. Spread the cooked broccoli over the top. Top the broccoli with the remaining cheese. Cover with tinfoil and bake in a 350 degree oven for 20 minutes, uncover and cook and additional 10 min.
