Broccoli and Cheese Stuffed Chicken Breast

Broccoli and Cheese Stuffed Chicken Breast 



INGREDIENTS 

SERVINGS 4 

2 boneless skinless chicken breasts, cut in half and butterflied (sliced through the middle-but not all the way through, to make a pocket)
1 1⁄2 cups steamed broccoli
2 tablespoons butter
2 tablespoons flour
1 cup milk
1⁄2 cup shredded cheddar cheese (or cubed Velveeta for a smoother sauce)
2 tablespoons cream cheese
1⁄2 cup shredded cheddar cheese (not a typo, another 1/2 cup)
salt and pepper
garlic powder

DIRECTIONS
Make cheese sauce: Melt butter in a small sauce pan, and then add flour and stir well.
Add milk gradually, whisking constantly to avoid lumps.
Add salt, pepper and garlic powder, and stir constantly until thickened.
Add 1/2 cup cheddar and the cream cheese, and stir to melt.
Add 1/4 cup of the broccoli pieces, and stir to combine.
Make chicken: Open butterflied chicken pieces.
Sprinkle with salt, pepper and garlic powder.
Place a bit of steamed broccoli and a bit of cheese in each.
Fold over, and seal with toothpicks.
Heat about 1-2 tablespoons olive oil over medium heat, and brown chicken on all sides, until cooked thoroughly.
Place chicken in a small casserole dish, and pour cheese sauce over.
This may either be browned in the oven, or served as is.

All you need is 1/4 - 1/2 cup Apple Cider Vinegar and a drop of dish soap.
Put ingredients in a small bowl, cover with cling wrap and poke a couple holes in it! That's it!

Easy salsa recipe



6 tomatoes
3 jalapenos (warning: hot)
1 medium white onion
1/2 a medium red onion
1 cup cilantro (I’m a fiend- so a little less if you aren’t)
5 cloves garlic
3 limes juice (hell, I even threw in some of the pulp)
1 tbsp cumin
1 tsp sea salt (More can always be added but not taken away!)
1 tsp chili powder

Optional/Seasonal:

1 cup (2-3 ears) of grilled/pan fried corn. If pan frying it, try putting in 3 tbsps of pineapple juice and 2 tbsp EVOO. Since you are using pans now, I would probably add the garlic, salt, ½ the cilantro, cumin and chili powder now.
Sweeten it up with some diced fruit of your choice- pineapple, mango, peach etc.

Blend together. Jar and refrigerate.

Cream Cheese Cranberry Salad

Cream Cheese Cranberry Salad 



Ingredients: 
* 2 small packages raspberry Jell-O 
* 1 1/2 cups boiling water
* 1 20-oz. can crushed pineapple
* 1 can whole cranberry sauce 
* 3/4 cup cranberry juice
* 1 cup pecans (toasted or untoasted), chopped
* 1 8-oz. package cream cheese, softened
* 1/2 cup sugar 
* 1 cup sour cream

Instructions: * Dissolve Jell-O in boiling water. * Add crushed pineapple (juice and all), cranberry sauce, liquid mixture, cranberry juice and pecans, reserving some pecans to sprinkle on top. Mix it all together well. * Mix well. Pour into a 9"x12" glass dish and refrigerate until firm. * Cream together cream cheese, sugar and sour cream until smooth. * When the first mixture is firm, spread the creamed ingredients on top. * Sprinkle chopped pecans on top.

Coconut Pie

Coconut Pie
Magically makes it's own crust!



1/2 cup Bisquick
3/4 cup sugar
4 eggs
2 cup milk
1 cup flaked coconut
1 tsp. vanilla
1 TBS. butter, softened

Combine all ingredients and pour into 9 inch buttered pie pan. Bake at 400 degrees for 25-30 minutes until custard sets. Like magic it layers into crust, custard, coconut topping. Cool.

Tip: One cup of Bisquick can be substituted by a mix of one cup of flour, 1½ teaspoons of baking powder, ½ teaspoon of salt, and 1 tablespoon of oil or melted butter.

1 cup powdered sugar
1 block of Philadelphia Cream Cheese
1 jar of cherries......
1 box of Graham crackers crumbs

Soften cream cheese first. Mix cream cheese with powdered sugar with a hand mixer. Put mixture into a bowl for dipping and add your graham cracker crumbs to another bowl.
Dip your cherries into the cream cheese mixture and then into the graham cracker crumbs.
So easy and quick!

Baked Spinach Mashed Potatoes

Baked Spinach Mashed Potatoes 

(You could also make this with Cauliflower Mashed in place of potatoes.)



(Yields 4 servings)......
Ingredients...
2 large potatoes, peeled and washed
2 T unsalted butter
1/4-1/2 c Skim milk
1/2 c cooked chopped spinach
1/4 t ground black pepper
1/2 t dried oregano
2-3 T crumbled light feta cheese
1 T light shredded cheddar cheese
Directions...
Boil potatoes, drain, add butter and milk... Mash until smooth.
Preheat oven to 425 degrees F.
Add spinach, pepper and oregano... Stir until well blended.
Top with cheeses and bake for 20-25 minutes... Cheese should be melted and lightly browned.
Enjoy!

Dill Cucumber Salad

Dill Cucumber Salad



1/2 cup sour cream or plain yogurt (I used greek yogurt)
1 cucumber peeled and sliced
1 medium to large tomato (sliced then cut in quarters)
2 slices onion (sliced then cut in quarters)
2 tsp lemon juice
1/2 - 1 tsp dill
Salt to taste
In a bowl, combine dill and salt.
Add sour cream or yogurt and lemon juice to taste. Mix well.
Add onion, cucumber, and tomato to the mixture and stir until the veggies are coated with the dressing.

Root Beer Angel Food Cake



1 1/2 c. Egg Beaters egg whites (or 10 large egg whites)
1 1/2 c. powdered sugar
1 c. all-purpose flour 
1 1/2 tsp. cream of tartar
1/2 tsp. root beer concentrate
1 c. granulated sugar
Using a large stand mixer bowl, separate your egg whites or pour carton egg whites into the bowl. Walk away and let them rest to warm up to room temp for 30 min precisely. Set your timer and get ready to work when it goes off.
While eggs whites are sitting to room temperature, you have time to get the powdered sugar and flour sifted in another bowl. Combine them with a wire whisk at first. Then have another bowl standing by because you will need it for the next step. Sift the powdered sugar and flour a total of 4 times.
So sift them together into one bowl. Then go back to the first one and sift the ingredients again.
Repeat until you have done this a total of 4 times. This helps to keep the powders fine and free of lumps. Now set it aside and walk away for the remaining minutes of the egg whites sitting still.
Preheat oven to 350° while you do next steps.
Now that it has been 30 minutes lapsed, take cream of tarter and rootbeer flavored concentrate and add to the egg whites before you begin beating them. Turn mixer to medium high on your stand mixer. You are looking for a soft peak status of the yolks. This is the stage just past the foaminess of the egg whites.
After you have your soft peaks showing up, start adding the granulated sugar slowly using 1 Tbsp. at a time and sprinkling it around as it continues to beat. Once the sugar has all been added you are looking for a stiff peak to form. This whole process from start to finish was about 10 min on my Kitchen Aid mixer. If you are using a hand mixer, it might take longer. Just focus on the stiff peaks though.
Once you have stiff peaks, remove bowl from stand carefully. You do not want to thump or bang the bowl. This could cause the peaks to fall. Take about 1/4 cup of the powdered sugar and flour mixture and lightly sprinkle over the peaks.
With a spatula, very gently fold the dry mixture into the peaks. You DO NOT want to mix them at all. You are just folding it in until blended. Continue doing this until all of your dry mix has been folded in and you have scraped sides and bottom of bowl to incorporate all the dry mix.
Once all combined, you are ready to put into your bundt or tube pan that is ungreased. Take the edge of the spatula and gently swirl through the batter to get any air bubbles out and make sure it is down in the pan all the way. The mixture is very thick and will not just pour into the pan like a regular cake does.
Conventional Oven:
In your preheated oven, place the pan carefully onto the lowest rack in your oven. Bake 35 to 40 min. or until the top is springy when touched. DO NOT do a toothpick test on this cake.

Place the pan carefully into the bottom of your oven. Bake 30-35 min. or until the top is springy when touched. DO NOT do a toothpick test on this cake.
When done, remove and leave in pan to cool. You want to invert the cake as soon as you take it out of the oven. To invert the cake you can either turn upside down onto another plate or turn upside down on the neck of a bottle. You just don't want it sitting on the bottom of the pan.
Allow cake to completely cool, approx. 30 min and then take a rubber spatula and run along the edges of the pan to loosen cake onto plate.
WHAT IS A STIFF PEAK & A SOFT PEAK?
The soft peak is where the peaks will slightly curl on the tips when you lift your spatula or beater out of the egg white mixture.
The hard peak is where the peaks will stand straight upwards and not fall over. You can actually turn the bowl upside down when they are stiff and not loose them. You don't want to, but that shows how stiff they are.

Chicken Veggie Bake with Gravy

Chicken Veggie Bake with Gravy



4 chicken breasts
4 potatoes, washed, cubed
2 cups carrots (or veggies of your choice) washed
1 tsp black pepper
1 tsp sea salt
1 tsp paprika
2 tsp Rosemary
1 tsp garlic powder
1 tsp onion powder
Extra virgin olive oil
Gravy: 
2 + 1/4 cups low sodium chicken broth
1 tsp black pepper
2 tsp dried parsley
2-3 Tablespoons corn starch
Preheat oven to 425F. Place the chicken, potatoes and carrots in a large baking pan. Sprinkle the seasonings on top. Drizzle with olive oil (couple of tablespoons). Using hands... Toss everything together until well coated. Bake for 45-55 minutes.
When chicken is almost ready... Bring 2 cups broth, pepper and parsley to a boil. Whisk the corn starch in the other 1/4 cup of broth and add to same pot. Whisk to blend and turn off heat. If you like your gravy thicker, remove some of the broth from the pot and add more corn starch... Return to pot and whisk. Gravy will thicken more as it cools. Plate, pour some gravy on top and enjoy!
