Serves: 8
8 egg roll wrappers, cut in 1/4
1 c. Egg Beaters
1/2 tsp. Nature's Seasoning
16 turkey pepperoni, cut in 1/4
1/2 c. shredded pepper jack cheese
1/2 bell pepper, diced fine
Conventional Oven:
Preheat oven 350° Coat muffin tin with cooking spray.
Place one square of egg roll wrapper in tin well and slightly push down in the center. Leave the corners sticking up.
Mix egg with seasonings. Scoop 1 Tbsp. seasoned egg into each well. Add veggies and meats. Top with cheese.
Bake in oven for 12-15 minutes or until egg is done in center. Remove and enjoy!
NuWave Oven:
Power: High
Time: 12 minutes
